I am so thankful that I was able to take part in this experience with all of these amazing people. From visiting organic farms and talking with the farmers to serving at St. John's kitchen and Stirling Mennonite Church and talking with various individuals involved in food justice initiatives within our community, it is incredible how much we experienced in just a few days. My relationship to food and to my community has grown so much from this experience in ways that would never have been possible in a traditional classroom. I am so thankful for everyone who was involved in this experience for being so open and willing to have real conversations about food, community and so much more. I came out of this experience feeling not only inspired, but empowered to take responsibility for my relationship to food, the environment, and my community.

When I chose to be a part of this service learning trip, I didn't have a clue what I was in for. I didn't know that I would be taught lessons in, not only our food culture, but the dignity surrounding our very choices as well. I didn't know that I would be challenged in my beliefs and asked to be critical of the stereotypes that our society enforces on us. I definitely did not expect to realize that although we are obsessed with fixing people, we have to understand that we do not have to right to do so. Rather, we should stand in solidarity of peoples' choices and love them for who they are not who we want them to become. I am so grateful for this experience and I am forever changed by the stories, the people, and the hope for change that this short trip offered.

My Encounter KW experience was one of the best I've had during my time at university. It only just ended and I can already see how different my view of food and relationships with food are. I don't see things the same as I used to, and I feel as if I can engage in the world in a whole new way. Coming away from the experience I know that the people I got to work with had a huge impact on me. It was such an incredible group of genuine and intelligent people who made this experience that much better. We came together not knowing each other and all and have left the experience with all of these memories and a huge new appreciation for the world around us.
